Start with the ingredients, not the front
The front of a chocolate bar is marketing. The back is evidence. Under UK food law, ingredients must be listed in descending order by weight: the first ingredient is the dominant one, everything that follows gets progressively smaller. That single rule does most of the interpretive work for you.
In a well-made dark chocolate, cocoa mass sits at the top of the list. After that, a short list — sugar, perhaps cocoa butter, perhaps vanilla — suggests the maker hasn't needed to complicate things. A long list is worth reading carefully, not because length is automatically a problem, but because each extra ingredient raises the question: what is it doing there?
If sugar comes first, the bar is principally sweet, whatever the packaging implies. Some bars marketed with bold, earthy language are still majority sugar by weight. The ingredients list won't lie to you the way the front panel might.
What the percentage does and doesn't tell you
The cocoa percentage — 70%, 85% or similar — describes the total proportion of the bar derived from the cacao bean in any form: cocoa mass, cocoa butter, cocoa powder. It says nothing about quality, provenance or flavour. As we cover in our piece on cocoa percentages, a 70% bar made from undistinguished beans can taste flat and harsh, while a 65% bar from exceptional single-origin cacao can be extraordinary. Percentage is a starting point, not a verdict.
A higher percentage simply means less room for sugar. A well-developed chocolate from quality beans at 68% can carry more complexity than a poorly fermented bar at 85%.
The fats in the bar
Cocoa butter is the natural fat of the cacao bean, and its presence in an ingredients list is unremarkable — many makers add extra cocoa butter to adjust texture and mouthfeel. Vegetable fat listed separately is worth pausing on. Bars containing vegetable fats other than cocoa butter are sometimes described as chocolate-flavoured products rather than chocolate proper; the substitution changes texture and the way flavour releases on the palate.
Lecithin — usually soy lecithin — appears in many bars and is not a concern. It is an emulsifier used in very small quantities to help the mixture flow during production. Its presence low on an ingredients list has no meaningful effect on the eating experience and is quite different from a fat substitution.
Milk chocolate and what goes into it
Milk chocolate gets its character from milk solids — look for milk powder, skimmed milk powder or whole milk powder. Whole milk powder contributes a richer, creamier quality; skimmed milk powder is leaner. Some makers use milk crumb, a cooked mixture of milk, sugar and cocoa mass that gives a distinctive caramel note — a traditional British approach with a character quite different from continental-style milk chocolate.

Origin claims and certification marks
"Made with Peruvian cacao" and "single-origin Madagascar" are not equivalent claims. The first tells you where the beans are from; the second usually implies greater specificity — sometimes a named region, cooperative or estate. Specific origin information is a reasonable indicator of traceability: the maker knows where their beans came from and considers it worth communicating.
Certification marks tell a different story. Fairtrade, Rainforest Alliance and similar schemes each set their own standards around pricing, labour conditions and environmental practice, and they audit supply chains independently. They are not interchangeable, but any certification mark means a third party has checked something specific — more than an uncertified origin claim can promise. A bar can also carry strong traceability credentials without a certification logo, particularly in the bean-to-bar world we cover separately, where direct relationships between maker and farmer are often the point.
What a label cannot easily tell you is how the beans were fermented and dried — post-harvest steps that do as much as genetics to determine final flavour. That information lives in the maker's own sourcing notes, if they publish them. Reading the label well gets you most of the way there; the rest is curiosity.
