Why chocolate portions are harder to predict than you'd think
Chocolate doesn't behave like wine or cheese at a gathering. People's appetite for it shifts depending on where it sits in the occasion — whether it's the centrepiece of a dessert table or a quiet finish to a dinner party with coffee. The same truffle that disappears in seconds after a light lunch might go untouched when it follows a heavy pudding. Context matters at least as much as quantity.
The numbers below are honest ranges, not targets. Treat them as a starting point, then adjust for what you know about your crowd and your occasion.
Truffles and bonbons with coffee
This is probably the most common scenario for artisan chocolate at a party: a small box of truffles handed round after dinner, or set out beside the coffee cups. Two to three pieces per person is a reasonable working figure. Fewer feels mean; much more and you'll find half of them wrapped in napkins to take home.
For a dinner party of eight, that puts you at roughly sixteen to twenty-four truffles. If you're buying from a maker whose pieces run on the generous side — dense ganache centres, substantial shells — lean towards the lower end. Delicate, petit-four-sized pieces can bear a slightly higher count.
Worth remembering: if you're offering a selection of flavours, people tend to take more than they would from a single variety. Variety is its own kind of appetite.
Sharing boards and informal gatherings
A grazing-style spread — broken slabs of dark chocolate alongside fudge, perhaps some chocolate-dipped fruit or a scattering of roasted nuts — calls for a different calculation. Think in weight rather than individual pieces. Around thirty to fifty grams of chocolate-based items per person works well for a mid-afternoon event where the board is one of several things on the table.
If the chocolate board is the main attraction — at a tasting evening or a small supper where it replaces pudding — push that towards sixty to eighty grams per person. That still sounds modest written down, but good artisan chocolate is rich and satisfies quickly in a way that supermarket confectionery doesn't.
For a fete or market stall where you're selling fudge in small bags, experience suggests the average buyer takes enough for two to four pieces per person in their household, then comes back if they've underestimated.
Chocolate at a wine or cheese evening
Dark chocolate with a high cocoa percentage has a long-standing place at the end of a cheese board, particularly alongside aged hard cheeses or a glass of something fortified. The portions here are small by design — this is punctuation, not a course in itself. One or two squares per person, or a single truffle, is plenty.
If you're pairing chocolate more deliberately with wine — running a tasting rather than just setting it out — allow three to five small pieces or portions per person across the whole session. The palate tires faster than people expect, and water and plain bread or crackers between samples matter as much as the quantity of chocolate you put out.
Practical planning notes
A few things that consistently trip people up:
- Children change the maths entirely. A gathering that's half adults, half children will consume chocolate faster and less discriminatingly. Budget upwards, and consider keeping the more expensive artisan pieces for the adult table.
- Time of day matters. Chocolate after a long evening meal disappears faster than chocolate at a mid-morning event.
- Buy slightly more than you think you need. Artisan chocolate keeps well — properly stored in a cool, dry place away from strong smells, most good-quality pieces will hold for several weeks. A small surplus is not waste; it's Tuesday evening sorted.
- Presentation affects consumption. Chocolate piled into a bowl gets picked through quickly and erratically. Arranged on a board or in a tiered stand, it tends to be approached more slowly and thoughtfully — which usually means it goes further.
None of this is exact science. The host who knows their guests will always make a better call than any formula. But starting from a concrete range and adjusting from there is considerably more reliable than guessing from scratch on the day.
