Skipton on Market Day

Few English market towns still feel genuinely useful rather than merely picturesque — Skipton, at the edge of the Yorkshire Dales, is one of them.

A town built on trade

Skipton has been a market town for the best part of a millennium. Its position at the foot of the Dales made it the natural meeting point for farmers, drovers and traders moving between the upland valleys and the lowland towns, and that logic hasn't entirely dissolved. The wide, sloping High Street — broad enough to have always accommodated stalls down its centre — still fills with traders several days a week, and the market retains a working quality that many have lost. People come here to buy food they intend to eat, not merely to browse.

The agricultural hinterland explains what you'll find. The Dales rolling away to the north and west — Wensleydale, Swaledale, Wharfedale — are grazing country, and their produce has always found its way down to Skipton. Cheese, meat, baked goods: the stalls reflect what this landscape actually produces.

Cheese from the Dales

The cheeses are worth seeking out. Wensleydale — crumbly, lactic, slightly honeyed, made in the valley to the north — appears here in forms unlikely to reach a supermarket: younger and fresher, or matured longer than the standard block. Swaledale cheese, made to a protected recipe in its own valley, is softer and more delicate, with a close, slightly yielding texture that reflects the high pasture its milk comes from. The two are made within a few miles of each other and yet read as quite different cheeses; tasting them side by side is worthwhile.

Our Wensleydale and Swaledale articles cover the craft and the dairies at greater length, but the market is where you can handle and taste rather than simply read.

Pies and baked goods

Yorkshire's pie tradition is robust and unapologetic. At Skipton market that means hand-raised pork pies with a dense, well-seasoned filling and a hot-water crust that holds its shape; it may also mean meat-and-potato pies, more particular to the north of England than most people realise. They're made to be eaten cold from the stall or warm from the oven, and sold to people who know exactly what they want.

Parkin is the other thing to look for, particularly in autumn and winter. This dark, sticky gingerbread is made with oatmeal and black treacle — a specifically northern recipe that differs from the softer, flour-only gingerbreads of other regions. Good parkin has a slight chew and a depth of flavour that takes a few days to develop after baking; a market stall is often the best place to find it made traditionally. Alongside it you might find oatcakes, teacakes and other baked goods from the same regional pantry.

What to do with what you buy

No plan is required. Move down the stalls slowly, buy what catches your eye, then find somewhere to sit. The canal basin is a short walk away, and the town has no shortage of places serving a proper pot of tea.

If you're spending the day in the Dales more broadly — driving up into Wensleydale or walking around Grassington — Skipton makes a natural starting or finishing point. The market lets you provision yourself with food that actually comes from the area you're about to travel through.

Planning your visit

The market runs several days a week. The busiest, most fully stocked days are worth checking before you go — the town's official visitor information is the most reliable source, since days and times can shift with seasons and civic arrangements. Arrive with a bag that can carry some weight. A whole Swaledale, a couple of pies and a slab of parkin add up faster than you'd expect.
