Why curing salts exist
Bacon without nitrates is a modern anxiety about a very old technology. Saltpetre — potassium nitrate — has been used in curing pork for centuries, because unprotected cured meat is a serious botulism risk. Curing salts do two things: they prevent the growth of Clostridium botulinum, one of the most dangerous bacteria in food, and they react with the myoglobin in meat to produce the characteristic pink colour and faintly sharp, savoury flavour we associate with bacon and ham. Remove them entirely and you have a genuinely different, and potentially unsafe, product.
Traditional curers used saltpetre in relatively imprecise quantities by today's standards. Modern charcuterie relies on sodium nitrite and sodium nitrate, which are more controllable. The chemistry is well understood: nitrate converts slowly to nitrite, and nitrite does the active preservation work. The two compounds are related but not identical, and the distinction matters when you read labels.
The celery extract problem
Here is where marketing and science part company. A product labelled 'nitrate-free' or 'no added nitrites' is, legally, telling you something true in a narrow sense — no synthetic nitrite compound has been added directly. What often has been added is celery extract, celery juice, or celery powder, sometimes alongside sea salt. Celery is naturally one of the most nitrate-rich vegetables there is. When celery extract is introduced into a cure, the nitrates it carries behave in exactly the same way as those in conventional curing salts.
Food campaigners and some researchers have pointed this out plainly: a consumer who buys 'no added nitrites' bacon out of concern about nitrite intake may be getting the same compounds, described differently on the packet. The label is technically compliant. Whether it is straightforwardly honest is a separate question.
No health claim is being made here in either direction. The question of whether nitrates and nitrites in cured meat pose a meaningful dietary risk is genuinely contested, and it is not our place to adjudicate it. What we can say is that a label implying the absence of something that is present under a different name is worth understanding before you pay a premium for it.
What genuine alternatives look like
Some traditional British and European-style air-dried products rely on salt concentration, low temperatures, controlled humidity and extended drying time rather than nitrate chemistry — closer to certain continental traditions where the environment itself does the preservative work. These products tend to come from smaller specialist producers.
They are also not quite the same product as bacon. Cured without nitrites, the meat is darker, the flavour earthier and less sharp, and the texture changes too. If you want something genuinely free of nitrate-derived compounds, this is the category to seek out. If you want conventional bacon with its familiar colour and cure, then 'no added nitrites' versions cured with celery extract are functionally similar to the mainstream product, whatever the packaging implies.
How to read the label
The ingredients list is more useful than the front-of-pack claim. Look for:
- Sodium nitrite (E250) or sodium nitrate (E251) — conventional curing salts, declared directly.
- Celery extract, celery juice or celery powder — natural nitrate sources used in many 'nitrate-free' products.
- Salt only, with no celery derivatives — the rarer category, more likely to be a genuinely nitrite-free product, though curing method and storage conditions then become important.
If the front says 'no added nitrites' and the back lists celery extract, you now know what that means. It does not mean the product is bad or that you should not buy it — that is your decision. It means the front-of-pack claim is doing more work than the reality behind it.
Producers who are transparent about their cure, their salt ratios and their drying conditions are generally worth the attention. Opacity on a bacon label is rarely a good sign.
