What Makes Handmade Marshmallows Different

Factory marshmallows are engineered foam; the handmade kind starts with a plant and ends somewhere considerably more interesting.

A sweet with botanical roots

Marsh mallow (Althaea officinalis) is a real plant, native to damp European meadows, whose root produces a naturally mucilaginous extract that confectioners once used to make a medicinal sweet. That original preparation disappeared from commercial production long ago, but the name — and the idea of a whipped, pillowy confection — persisted.

Modern marshmallows share almost nothing with that root paste except the concept. Structurally, they are a stabilised foam: air beaten into a sugar system and held there by a setting agent. Simple in principle, finicky in practice.

How the process works

A syrup of sugar and glucose is cooked until most of the water has driven off and the sugar is highly concentrated. Gelatine, bloomed separately in cold water, is combined with the hot syrup and the whole thing is beaten at high speed. As it cools, it aerates dramatically — roughly tripling in volume, transforming from a dense, glossy liquid into something resembling very thick, slow-moving cloud.

The mixture is poured into a tray dusted with icing sugar and cornflour, which prevents sticking and absorbs surface moisture. After setting — several hours, at minimum — the slab is cut and each piece is tumbled through more of the same dusting mixture. The result has a delicate skin and a soft interior that tears cleanly rather than bouncing back like rubber.

The coating matters more than it sounds. Beyond preventing pieces from welding together, it gives handmade marshmallows their characteristic slightly powdery exterior — an immediate sensory contrast to the sealed, uniform surface of an extruded factory product.

Why handmade ones taste better

Mass production favours shelf life and consistency. Factory marshmallows are made at scale with stabilisers, preservatives, and engineered flavourings. The texture runs towards rubbery because the gelatine ratio is higher and aeration is controlled for durability rather than softness.

Handmade marshmallows are made in smaller batches, sold fresher, and flavoured with real ingredients — vanilla from pods, fruit purées, good-quality cocoa, floral waters. Because the maker controls the sugar cook, the gelatine level, and the whipping time, texture can be tuned towards genuine softness rather than mere chewiness. You notice it the moment you bite through the dusted exterior.

Flavour compounds are also more volatile. A marshmallow scented with real rose water or genuine raspberry purée smells of something specific, not of a laboratory approximation of it.

Vegetarian and vegan alternatives

Conventional gelatine is derived from animal collagen, which rules out marshmallows for vegetarians and vegans. Two alternatives are increasingly common in the handmade market.

Neither is a straight swap. The best vegan marshmallows tend to come from makers who have developed their own ratios through considerable trial rather than simply substituting one ingredient for another.

Toasting, hot chocolate, and other uses

A handmade marshmallow toasted over a flame behaves quite differently from its factory counterpart. The fresher gelatine and sugar cook mean it caramelises rather than scorches — the exterior blisters and browns while the interior becomes almost liquid, and the contrast between the two is the point. In hot chocolate, a good marshmallow melts slowly from the edges inward, releasing sweetness gradually rather than dissolving into nothing. We have written separately about pairing marshmallows with proper hot chocolate, which is worth reading alongside this piece.

They also sit well on a cheeseboard alongside something sharp and aged, where the sweetness cuts across the salt — an underrated combination that a number of British artisan makers have developed through salted caramel and honeycomb variations.
