Pectin: Why Some Jams Set and Others Don't

The difference between firm-set marmalade and a spoonable strawberry jam comes down to a single invisible ingredient that the fruit either has or hasn't.


What pectin actually is

Pectin is a structural fibre found in the cell walls of fruit. It is entirely natural — as old as the fruit itself. When fruit is cooked, heat breaks down those cell walls and releases pectin into the surrounding liquid. Add enough sugar and a measure of acid, and the pectin molecules link together into a loose mesh, trapping liquid within it. That mesh is what we call a set.

The maker's skill lies partly in reading what the fruit brings to the process and working with it rather than against it.

Why fruit varies so much

Not all fruit is equally generous with pectin. Cooking apples, quinces, redcurrants and Seville oranges sit at the high end — fruits with dense, structured flesh and, in the case of citrus, thick pith packed with the stuff. This is why Seville orange marmalade sets with such reliability, and why a chopped cooking apple in a hedgerow jelly is not an accident of tradition but a practical act of pectin-borrowing.

Strawberries and cherries occupy the other end of the scale. Their flesh is soft, their pectin content low, and the result — if you simply cook them with sugar — is a preserve that stays loose and spoonable. Strawberry jam made this way is not a failure; it is the honest expression of what a strawberry actually is. Many people prefer it. It does, however, explain why strawberry jam tends to spread rather than slice, and why mass-produced versions often rely on added pectin to achieve a firmer result.

Ripeness matters too. Pectin is most concentrated in slightly underripe fruit and breaks down as ripeness advances. A batch made from fruit that has sat too long will set less readily than one made from fruit picked just before peak ripeness — a detail that experienced preservers know instinctively, even if they couldn't always explain the chemistry.

The role of sugar and acid

Pectin on its own won't set anything. It needs two partners: sugar, which draws water away from the pectin molecules and encourages them to bond, and acid, which creates the right chemical conditions for that bonding to happen. Most fruit carries its own acid — citric acid in citrus, malic acid in apples — but where fruit is low in acid as well as pectin, a splash of lemon juice is the traditional remedy, and it is not there for flavour alone.

This three-way relationship between pectin, sugar and acid is why proportions in preserving matter. Reducing the sugar in a jam recipe affects whether it sets at all. The sugar is doing structural work, not just sweetening.

Commercial pectin and where it comes from

The pectin sold in packets and bottles for home preserving is not a synthetic creation — it is the same substance, extracted and concentrated. Most commercial pectin comes from two sources: citrus peel, a by-product of juice production, and apple pomace, the pulp left after pressing for juice or cider. Both are rich in pectin and would otherwise go to waste.

Added commercial pectin is most useful with low-pectin fruit, or when a maker wants a faster set — shorter cooking time preserves more fresh fruit flavour, which is particularly valuable with strawberries and raspberries. Traditional preservers often manage pectin levels through fruit selection and blending rather than adding it separately. Neither approach is more correct; they produce different results, and both have their advocates.

Pectin in British preserving tradition

The high-pectin fruits of the British hedgerow and kitchen garden shaped the country's preserving traditions in ways that are easy to overlook. Quince paste — firm enough to slice — relies on that fruit's exceptional pectin content. Crab apple jelly sets to a clear, jewelled finish because crab apples are extraordinarily rich in the stuff. Redcurrant jelly, the traditional accompaniment to lamb, achieves its clean, firm texture for exactly the same reason.

Seville orange marmalade owes its character largely to the Seville orange's thick, pectin-laden pith. Sweeter orange varieties have thinner pith and less pectin, which is one reason why Seville marmalade has a texture and structure that other citrus versions struggle to match. The bitterness is only half the story.

Understanding pectin requires no chemistry degree — only attention to the fruit. Which ones set easily, which need help, which reward the blending that older recipes instinctively built in. That knowledge, accumulated over generations of British preserving, was always pectin science, even when nobody called it that.
