A method, not a postcode

Stilton must come from a handful of Midlands counties. Cornish Yarg cannot be made in Kent. But cheddar — Britain's most consumed cheese by some distance — carries no geographical protection. You can make it in Wisconsin, in New Zealand, in a factory on the outskirts of any city, and call it cheddar quite legally. The reason lies in what the word actually describes: a specific, physical technique applied to the curd, not a patch of Somerset land.

That technique is cheddaring. It is the stage in the make that gives the cheese its defining structure, and understanding it explains almost everything distinctive about how cheddar behaves — in the mouth, under a grill, when aged for months in a cave.

What happens during cheddaring

Once the milk has been set, cut, and the curds and whey separated, most hard cheeses are simply drained and pressed. Cheddaring goes further. The curds are gathered into slabs, which are then stacked on top of each other, left for a period, turned, restacked, and the process repeated. The weight of each slab pressing down on those beneath squeezes out whey that simple drainage would leave behind. As the slabs are turned and rearranged, the curds knit together and develop a fibrous, almost chicken-breast quality — what cheesemakers call a matted texture.

Temperature control matters enormously. The vat or draining table must be warm enough to keep the curd pliable and the acidity developing at the right pace. Too cool and the curd stiffens before it has properly knitted; too warm and the fat begins to separate. The cheesemaker reads the curd constantly — pressing a thumb in, listening to how it tears, watching how it behaves as the acidity climbs.

After cheddaring, the matted slabs are milled — broken back down into small, rough-edged pieces — salted, and packed into moulds for pressing. This sequence, cheddaring then milling, produces the close, slightly flaky interior texture that distinguishes a well-made traditional cheddar from other pressed hard cheeses.

Why the name stuck to the cheese

The village of Cheddar in Somerset sits at the foot of a gorge whose caves provided ideal cool, humid conditions for maturing cheese. The cheese made in that area became well known enough that its name travelled — but so did the method used to make it. Once cheddar production industrialised and migrated across the British Isles and beyond, the geographical connection loosened. The technique remained, and with it the name.

This is why, unlike almost every other famous British territorial cheese, cheddar never acquired protected designation of origin status. By the time such protections were formalised, cheddar was already a global common noun. West Country Farmhouse Cheddar does hold protected status — a geographically defined product made to traditional standards — but plain cheddar as a category belongs to no single county or country.

What cheddaring does to flavour

The textural changes are visible; the flavour consequences are less obvious but equally significant. As the curd slabs sit and are turned, bacterial activity continues and acidity builds. That developing acidity underpins mature cheddar's characteristic sharpness — the clean, almost tangy quality absent from a younger pressed cheese. The lower moisture content that cheddaring achieves also means the cheese can be aged for far longer without spoiling, concentrating flavour and allowing complex savoury, sometimes crystalline notes to develop over many months.

A block of mild cheddar and a cloth-bound truckle aged well beyond a year are technically the product of the same process. The difference is almost entirely time — and the lower moisture that cheddaring makes possible is what allows that extended ageing to happen safely.

Hand versus machine

In large-scale production, mechanised cheddaring towers handle the stacking and turning automatically, moving slabs through a continuous system. In traditional farmhouse production, it remains largely physical — a cheesemaker lifting, turning, and stacking heavy curd slabs by hand at regular intervals. Neither approach is inherently superior; they reflect different scales and different market demands. What matters is whether the fundamental action — sustained compression and turning of the curd over time — receives enough attention to do its work properly.

When you cut into a well-made traditional cheddar and find that slightly layered, close-grained interior, you are looking at the physical record of cheddaring. The method wrote itself into the cheese, and then lent the cheese its name.
