Why the container is part of the recipe
Open a cask of ale and a keg of lager and you have two beers that could share the same grain and hops yet taste like different drinks. That's not marketing — it's physics and microbiology. The container determines how the beer is conditioned, how it's served and how long it remains worth drinking.
Cask: alive and briefly so
Cask ale arrives at a pub still fermenting. Unfiltered, unpasteurised, the yeast left inside carries on working, producing fine, gentle carbonation that drinkers describe as soft or creamy — nothing like the assertive fizz of gas-pushed beer. Served at cellar temperature, it rewards attentive keeping: the landlord must fine it, settle it and vent it carefully before it reaches a glass.
Once a cask is broached, the clock runs fast. Oxygen is now in contact with the beer, and the same living quality that makes cask ale interesting makes it fragile. Days, not months. A well-kept cask at a busy pub is one of the finest things British brewing produces; a tired one left too long on a quiet bar is a different experience entirely. The format asks something of everyone in the chain.
Keg: consistent by design
Keg beer is filtered, pasteurised, or both. The yeast is gone or inert, and the beer is pushed to the tap by carbon dioxide or a gas blend rather than gravity or a hand pump. The result is colder, more uniformly carbonated and far more stable — a sealed keg stored correctly holds its condition for weeks or months without daily management.
The trade-off is texture and liveliness. Filtration removes the yeast particles that contribute body; pasteurisation can soften aromatic volatiles. Whether that matters depends on the beer. A crisp pilsner or a hazy pale ale driven by late-hop aroma can work beautifully in keg. A complex, slowly-evolving cask bitter arguably loses something it was designed to express. Neither format is inherently superior — they suit different beers and different circumstances.
Bottles and the problem of light
Glass introduces something neither cask nor keg faces: light. Ultraviolet and short-wave visible light react with hop compounds to produce a sulphurous molecule that most drinkers recognise as a skunky or struck-match smell. Clear glass offers almost no protection; green glass offers some; brown glass blocks a significant portion of the damaging wavelengths, which is why it remains standard for quality bottle-conditioned beer.
Bottle conditioning — where a small amount of sugar and live yeast are added before sealing — replicates some of the character of cask in a portable form. Cans and the case for metal
Small independent brewers shifted towards cans for practical reasons. Cans block light completely — no bottle format can match that. They are also lighter and more compact to ship, which matters when a small brewery is distributing across the country. Less weight means lower transport costs and a smaller carbon footprint per case.
Concerns about cans affecting flavour have largely been addressed by modern liner technology; the beer never touches bare aluminium. What a can cannot do is replicate the cask experience — the beer inside is typically filtered or pasteurised, served cold and carbonated with gas. That is not a flaw; it is the right format for the beer most cans contain. A well-made canned pale ale is a different object from a hand-pulled mild, and comparing them directly misses the point of either.
Matching format to beer
Cask offers texture and freshness — the beer still active in the glass — that no other format matches, but only where the pub has the throughput and skill to look after it. Keg trades that fragility for reliability, and reliability is its own virtue. Cans are the practical choice for small brewers reaching distant customers; bottles remain worth the extra care when the beer inside benefits from conditioning in glass.
