What makes honey so stable
Two things work together to make honey extraordinarily resistant to spoilage. First, its moisture content is very low — so low that bacteria and mould struggle to survive in it, because the environment simply doesn't give them what they need to grow. Second, honey is naturally acidic, which reinforces that hostile environment for microbes. The result is a food that, if kept sealed and away from damp, has no meaningful expiry in the way that dairy or bread does.
This isn't a modern discovery or a preservation trick. It's just chemistry — the same properties that made honey useful as a wound dressing in pre-antibiotic medicine are exactly what make it last in your larder.
The one thing that can go wrong
The only genuine enemy of honey is water. If moisture gets into the jar — from a wet spoon, a loosely replaced lid left near a steaming kettle, or simply a very damp atmosphere over time — fermentation becomes possible. Wild yeasts present in all honey can activate when moisture levels rise, turning it slightly alcoholic and sour. It won't make you ill, but it will taste wrong.
Keep the lid on between uses. Use a dry spoon. Store it somewhere that isn't directly above the hob. That's genuinely all the maintenance it needs.
Crystallisation is not a problem
The most common reason people throw away perfectly good honey is because it has solidified in the jar. This is a shame, because crystallisation is entirely natural and has nothing to do with quality or age. All raw honey will eventually crystallise — some faster than others depending on the balance of sugars in the nectar it came from. A honey high in glucose, such as one made from oilseed rape, can set within weeks of the jar being opened. Others, such as acacia, stay runny for considerably longer.
Set honey and runny honey are the same product at different temperatures. If you prefer a pourable consistency, stand the jar in warm water — not boiling, just warm — and the crystals will dissolve back. Avoid the microwave if you can; uneven heat can damage the more delicate aromatic compounds that give a good single-origin honey its character.
Some people actively prefer set honey. It spreads without dripping, sits neatly on toast, and has a slightly more rounded, less sharp sweetness on the palate. Many British artisan producers sell it deliberately set, which is worth knowing before you try to loosen it.
How to store it well
A cool, dark cupboard is ideal. Honey doesn't need the fridge — in fact, refrigeration speeds up crystallisation significantly, so unless you actively want it set solid, keep it at room temperature. Heat won't spoil it in any dangerous sense, but prolonged exposure to warmth can gradually dull the flavour and darken the colour, so a spot away from the cooker is better than one beside it.
Decanted into a clean, dry, well-sealed jar, honey from a larger batch will keep in good condition essentially indefinitely. The best before date printed on commercial jars is a regulatory requirement rather than a reflection of the honey actually degrading — it tells you when the producer expects it to be at its flavour peak, not when it becomes unsafe.
What this means when you're buying
Because honey keeps so well, it rewards buying in slightly larger quantities from producers whose work you rate. A good raw honey from a specific region or forage — heather from the Scottish moors, wildflower from a hay meadow, soft-fruit blossom from a Kent farm — is worth having on hand not just as a sweetener but as an ingredient with a genuine sense of place. The flavour is at its most expressive when the honey is relatively fresh, but it won't suddenly become dull or unpleasant. It simply evolves slowly, which is not the same thing as going off.
If you've inherited a jar of unknown vintage from the back of a cupboard, smell it before you dismiss it. If it smells like honey — sweet, faintly floral, characterful — it almost certainly is still honey in every meaningful sense.
