Why the machine gets too much credit
A new espresso machine, a fancier kettle, a different brand of pod. The same beans, ground and brewed carelessly, will disappoint regardless of what they pass through. The variables that shape what ends up in the cup are grind size, the ratio of coffee to water, and the water itself. Get those right, and even a modest setup produces something worth drinking.
Grind size and extraction
Grind size controls speed of extraction. Water moving through finely ground coffee has more surface area and extracts faster. Too fast, and it pulls out harsh, bitter compounds that should stay behind. Too coarse, and water passes through without picking up enough, leaving the cup thin and sour — a fault often blamed on the beans.
Every brew method has its own window. A coarse grind that works well in a cafetière produces weak, under-extracted coffee in an espresso machine. A fine espresso grind forced through a pour-over tastes burnt. The practical rule: if the result is bitter, grind coarser; if it is sour or hollow, grind finer. A burr grinder — even an inexpensive hand-cranked one — gives far more control than a blade grinder, which chops unevenly and makes consistency nearly impossible.
Grinding immediately before brewing also matters. Once ground, the aromatics that give coffee its character begin to disperse within minutes. Whole beans, bought fresh and ground to order, preserve those compounds until the last moment.
Freshness and where it begins
Coffee changes from the moment it is roasted. In the days immediately after roasting, beans release carbon dioxide rapidly — degassing — and the flavour is often unsettled. A week or two in, that settles, and the coffee enters its best window. Beyond a month or so, the oils that carry flavour begin to go stale. The roast date on a bag matters; no date at all is a warning sign.
How a bean was processed before roasting also affects how its freshness presents. Naturally processed coffees — where the fruit dries around the bean — carry heavier, fruitier flavours that shift noticeably as the coffee ages. Water: the ingredient nobody considers
Water makes up the vast majority of what is in the cup. Using unsuitable water does not merely fail to help — it actively works against you.
Very hard water, high in calcium and magnesium carbonates, mutes acidity and deposits limescale in equipment over time. Distilled or softened water goes the other way: without mineral content, it cannot carry extraction properly, and the result tastes flat. The middle ground is water with moderate mineral content. Filtered tap water in many parts of the country hits it naturally; a simple jug filter makes a meaningful difference in hard water areas.
Temperature matters too. Water that is too hot scorches the grounds; too cool, and extraction drags. Letting a kettle rest for thirty seconds after boiling is a reasonable starting point for most methods. A gooseneck kettle with a temperature setting removes that guesswork entirely.
Ratio and the value of consistency
The ratio of coffee to water determines strength. No single ratio is objectively correct — different methods, different beans and different preferences all point somewhere different. What matters far more than hitting a particular number is being consistent enough to learn from what you make.
Measuring by weight rather than scoops gives you repeatability. A scoop of finely ground coffee weighs more than a scoop of coarse, so scooping introduces a variable that weighing removes. A small kitchen scale that measures in grams is not specialist equipment; it is just a reliable way to ensure that when you change something, you know what you changed.
Start somewhere, taste critically, and adjust in one direction at a time. More coffee relative to water produces a stronger, denser brew; less makes it more dilute.
