Why Croissant Layers Are Mostly Air

A croissant's flaky interior is an engineering feat held together at fridge temperature — understanding it changes how you think about every bite.


What lamination actually means

Strip away the mystique and lamination is a straightforward idea: a block of butter is enclosed in dough, then the whole thing is rolled flat and folded back on itself, repeatedly, until the two materials exist as hundreds of alternating sheets — dough, butter, dough, butter — stacked like the pages of a very thin book. No mixing, no blending. The point is to keep them separate for as long as possible.

In the oven, the water held within the butter hits heat and turns to steam. That steam forces the layers apart with surprising violence before the dough sets around the gaps. The result is a crumb that is mostly hollow — a honeycomb of air pockets held in place by gossamer walls of cooked pastry. Which is why a well-made croissant feels almost weightless and shatters rather than tears.

Temperature is where it gets difficult

Everything hard about this process comes down to one variable: heat. Butter has a narrow working range, and either side of it the lamination fails in a different, unrecoverable way.

Too cold, and butter becomes brittle. Roll it and it shatters, puncturing the dough sheets rather than moving with them. The layers tear, the structure breaks, and no amount of careful folding will undo the damage. Too warm, the butter softens to the point where it begins to merge with the dough rather than sitting apart from it. The sheets dissolve into each other. What you end up baking is closer to brioche — enriched, soft, pleasant enough, but without a single flake to its name.

Good lamination is therefore a constant negotiation between rolling and resting, between working the dough and returning it to the cold. Bakers in warm kitchens have a harder job than those in cool ones, and a slightly warmer day can undo an otherwise careful batch.

Why butter quality is not incidental

The butter used for lamination matters beyond simple richness. What professionals look for is a higher fat content and a specific melting point — butters sometimes described as dry, because their lower water content means less steam at the wrong moment and more structural integrity during rolling. A butter that softens too readily at room temperature will start to merge with the dough before the laminate ever sees an oven.

This is why many artisan bakers in Britain seek out European-style butters with a higher fat content than the standard British block. It is not snobbery. It is the difference between layers that hold and layers that don't.

Croissants versus puff pastry

Both are laminated. The distinction that matters is yeast. Puff pastry contains none — it rises purely through the mechanical force of steam between its layers, which is why it can be so extraordinarily crisp and dry. A croissant dough is yeasted, and that changes its character entirely. The yeast ferments during the long, cold resting periods built into lamination, contributing flavour and a slight chewiness to the crumb. The layers are still there, still forced apart by steam, but the dough between them has more life to it — less brittle, more bread-like at its core.

This is also why a croissant smells the way it does. That faint tang, the depth underneath the butter, comes from fermentation. Puff pastry, for all its technical brilliance, is comparatively neutral in flavour — which is precisely what you want when it is carrying something else, but not what you want when the pastry is the point.

Why croissants don't keep

A freshly baked croissant is at its peak for a matter of hours. The laminated structure that makes it extraordinary is also what makes it fragile over time. As it cools and sits, moisture migrates: the crisp outer shell softens, the air pockets begin to collapse, and the honeycomb crumb that was mostly nothing becomes dense and a little sad. By the following morning, what you have is still edible — good, even, toasted — but the original thing is gone.

This is not a flaw in the baking. It is an inherent quality of the structure. A croissant that kept well for several days would not be a croissant in any meaningful sense. The brevity is part of what it is, which is why the best argument for buying from a local baker rather than a supermarket shelf is simply timing — a croissant baked that morning is a different food from one baked the day before.
