How Alcohol-Free Spirits Are Actually Made

Removing alcohol from a spirit leaves something structurally alien to the original — understanding why reveals everything about how these bottles behave.


The problem nobody advertises

Alcohol is not just the bit that makes you drunk. In a conventional gin, ethanol acts as the solvent that pulls aromatic compounds out of botanicals and keeps them suspended in the liquid. It also provides body — that slight viscosity and faint burn as the drink passes over your palate. Strip it out and you are not left with a softer version of the original. You are left with something structurally different, closer to a weak botanical water than a spirit.

The most honest way to think about alcohol-free spirits is as a separate category of crafted drink, not as a facsimile. Makers who understand this tend to produce the most convincing results. Those who market their product as "just like the real thing" are setting expectations they cannot meet.

How the flavour gets in

The main technique is vacuum distillation. By reducing the atmospheric pressure inside a still, makers can distil at temperatures well below the usual boiling point — sometimes barely above room temperature. This matters because the aromatic compounds that give juniper, coriander, citrus peel and other botanicals their character are fragile; standard distillation temperatures would destroy many of them. Under vacuum, they can be captured intact and concentrated into a base liquid, typically water with a small carrier.

Many producers also use cold-steeping or pressing — macerating botanicals in water or a light base, or physically pressing them to extract oils. These methods pick up different flavour fractions than distillation does, so blending the two tends to give a more rounded result. A handful of producers take a different route: distilling a conventional spirit first, then removing the alcohol under reduced pressure in a separate step. The argument is that you begin with a fully formed flavour before stripping back. The counter-argument is that alcohol carries aromatic compounds with it on the way out, which is why this approach does not automatically produce a richer result than building alcohol-free from scratch.

Recreating the burn

Whatever the extraction method, the maker faces the same problem: the absence of ethanol's warmth. Without it, drinks taste flat and slightly sweet, lacking the definition that makes spirits worth sipping. Most producers address this with bittering agents — gentian root, quinine and similar botanicals — or warming compounds such as ginger or black pepper extract. These do not replicate ethanol precisely, but they give the palate something to grip.

This is also why alcohol-free spirits show better in a long drink than over ice alone. A good tonic adds carbonation, bitterness and structure, offsetting the slight hollowness that becomes obvious when the product is served short. That is not a flaw to work around — it is the honest way to get the most from what the category offers.

Why they cost what they do

Many assume alcohol-free spirits should be cheap because duty accounts for a significant portion of a conventional bottle's price. Producers do pay no alcohol duty, but the saving is largely absorbed elsewhere. Vacuum distillation equipment is expensive to buy and run; the process is slower and more labour-intensive than standard distillation. Natural botanical extracts, pressed oils and quality bittering agents are not cheap ingredients. And because the finished product contains no alcohol, it cannot preserve itself.

That last point explains the refrigeration requirement. A real spirit keeps almost indefinitely at room temperature because alcohol at sufficient concentration is inherently antimicrobial. An alcohol-free spirit, once opened, behaves broadly like a premium botanical cordial — it will deteriorate within a few weeks if left out, and should be kept cold and used within the period the maker specifies. For anyone used to leaving a bottle of gin in a cupboard for months, this is a habit worth changing.

What good looks like

The producers doing the most interesting work apply the same rigour to botanical sourcing and blending that a serious distiller brings to a conventional spirit. The vocabulary is the same — balance between top notes and base notes, the way one botanical bridges two others — and knowledge of how those plants behave transfers directly. Styles and quality still vary considerably. Some bottles are genuinely impressive drinks in their own right; others lean heavily on sweetness to compensate for missing structure. Reading the botanical list and understanding how the producer has addressed the warmth question will tell you more than almost any marketing claim on the label.
